BBQ Pork Tenderloin + Mac & Cheese

Pork Tenderloin finished with bbq, over mac & cheese.
Ingredients
Pork Tenderloin
1⅓ lb
Elbow Macaroni
½ lb
Shredded Cheddar Cheese (sharp)
2 cups
Whole Milk
1½ cups
Butter
2 tbsp
All-purpose Flour
2 tbsp
Bbq Sauce
1 bottle
Olive Oil
Kosher Salt
Black Pepper
Garlic Powder

Boil macaroni in salted water until al dente. Drain.

Same pot: melt butter, whisk in flour, cook 1 min. Slowly whisk in milk, thicken 3-4 min.

Off heat, stir in cheddar in two batches until smooth. Fold the pasta back in.

Slice tenderloin into 1" medallions. Pat dry, season with salt, pepper, garlic powder.

Sear in olive oil over medium-high, 3 min per side, to 145°F internal.

Brush BBQ sauce on in the last 3 min of cooking to caramelize the glaze.
